Our Story
Simply Thai was started by the Saing family in October of 2006. Chaveewan Santadsomruajkarn was born in Bangkok, Thailand and moved here as refugees with her husband Mahn Saing and her three sons, Jade, Gene and Jeff. She is the heart and soul of the restaurant and has taught her family everything she knows about Thai food and business. Her great Grandmother once cooked for the King of Thailand and has passed her family recipes down through the generations.
When our family first arrived here in the United States in 1992, Chaveewan worked for her sister at another local Thai restaurant, Thai Cafe for many years. Following that, she worked at Amazing Grace, a health food store formally located on Bardstown Rd. This is where she rolled sushi and gained a large following of vegan and vegetarian customers who then followed her when she opened the doors of the very first Simply Thai off Wallace Ave. in St. Matthews. Six years later, her son, Jeff, and his wife opened the Middletown location in December of 2012.
The menu consists of a wide variety of Thai food and sushi, with almost all of the dishes being customizable to order vegan, vegetarian, gluten free, spice levels, even adding/removing veggies, meats, seafood, etc! This is what we desire for our food and it is also what takes time to prepare fresh. We want each customer to be able to order their dish with the food they love. With over 200 ways to cook one menu item, the delicate layers of ingredients are built for you to love. We try to give a piece of our family to the community by cooking for you like our mom has cooked for us.
